More With Less Cookbook has some great Lentil Recipes!! My favorite is Lentil Barley Stew. They are delicious even just baked with any seasoning you’d use for beans, some diced carrots, onions, celery and potatoes are a nice compliment!

Favourite thing to do with lentils? I sprout them in a jar–takes only a couple of days and they’re good in salad. You can make a big pot of lentil soup in the pressure cooker in about ten minutes (I posted that on my blog awhile back). There’s the Hillbilly Housewife’s now-classic rice-lentil tortilla stuffing. But I most often add them in small amounts to vegetable soups or a pot of rice–I don’t get as many “NOOOO, NOT LENTILS” reactions that way.

We like “Lentil and Linguine” soup. After rinsing a 16 oz. package of lentils, we put them in a pot on the stove with some sliced carrots and several chopped cloves of garlic, cover with about 3″ of water and cook for 45 minutes or so. Now add an 8 oz can of tomato sauce and bring to a gentle boil. Add several hand fulls of uncooked broken spaghetti and cook until soft. The best part is after the soup is in your bowl, add lots of Parmesan cheese!

I love sprouted lentils and several of my children do too – that’s the only thing I’ve used them for in recent memory. They taste a lot like raw green beans. Yum!
